There’s something special about a long table filled with people, every seat taken,
laughter spilling over, stories and ideas exchanged with a glass of Italian red in hand.
One night, new friends made us spaghetti all’assassina, a Puglian specialty that
quickly became one of my all-time favourite meals. It’s simple but a labour of love,
raw spaghetti fried in olive oil until burnt, with sauce spooned over as it cooks, then
finished with stracciatella on top. Buonissimo! Moments like this, shared with friends
and family under the stars on a summer night, surrounded by sage green olive trees
and creamy white trulli, are the kind that stay with you. An experience that lingers
long after the table is cleared.
